A graduate of the Culinary Institute of America and the Institute of Integrative Nutrition, Bruce Gluck brings a well-rounded approach to school nutrition. Under his leadership, New Canaan Public Schools continue to set the standard for homemade, nutritious, locally-sourced school lunch. His staff uses the freshest meats, vegetables and fruits to prepare meals on-site daily.
Mr. Gluck has been invited to share his insight regarding student nutrition and school food services with wellness committees from public schools in Easton, Fairfield, Greenwich and Ridgefield as well as Fairfax, Virginia. Recently, a delegation from Pace University and the Japanese Local Government Center contacted him as part of their efforts to learn how to combat childhood obesity.
Under his guidance, food services staff has discovered how to cook soup stocks from scratch, prepare produce daily and favor healthy preparations. School lunch options are culturally diverse and nutritionally dense, which means that they incorporate healthy proteins, complex carbohydrates and friendly fats. When a product does not meet Mr. Gluck's high standards, he works with local businesses to create a product to his specifications. For example, the multi-grain dough for his pizza crust recipe includes high quality carbohydrates like spelt and quinoa. The pint-size containers of milk were custom-made by a local hormone-free dairy. These kinds of collaborative efforts make it possible to source the highest quality ingredients for our students, teachers and administrators.
